Joyfully Healthy Almond Joys
The hubby came home from a business trip and confessed that he fell to the temptations of a few Almond Joys in the airport. I then set out to make a healthy, guilt-free version…they are easy and delicious!! This version is full of healthy fat from the MCT oil, antioxidants from the dark chocolate, a bit of protein from the almonds, enzymes & minerals from the raw honey, and no added sugar. You won’t miss the store bought variety at all!
2 cups of unsulfured, unsweetened shredded coconut
1 TBSP local raw honey
4 bars of dark chocolate or a bag of dark chocolate chips
2-4 TBSP MCT oil or coconut oil
Package of small sized paper muffin cups
Place paper muffin cups on a cookie sheet. In a food processor, pulse the shredded coconut with the honey and enough of the MCT oil or melted coconut oil to make the shredded coconut easy to press together in the bottom of the paper muffin cups. Spoon a teaspoon of the coconut mixture into each muffin cup, press down firmly on each one to make a fat smooth surface.
Place a whole almond on each.
Melt the chocolate over low heat with 2 teaspoons of MCT oil or coconut oil. While the chocolate is melting, keep stirring until smooth. Once melted, gently spoon a tablespoon of melted chocolate over each muffin cup.
Place the tray into the freezer for a half an hour to set. Store in the fridge or freezer. YUM!
